Marinated vs. Fresh Galbi — SEOLYA GALBI Cheongdam

Marinated galbi (yangnyeom galbi) is scored beef rib soaked in a marinade before grilling; fresh galbi (saeng galbi) is aged rib grilled with no marinade and eaten with salt. The marinade adds sweetness and char, making it the easier first order; fresh galbi shows the aroma and nutty richness of Hanwoo 1++ as it is. At SEOLYA GALBI Cheongdam, Seolya Marinated Galbi is ₩59,000 per 100g and top-grade fresh galbi is ₩63,000 per 100g (weighed without the bone), and a dedicated server grills both over charcoal at your table.

The cut and the three stages of aging

Both dishes use Hanwoo 1++ beef rib (so galbi), served as a boneless cut — on the printed menu they appear as Seolya Marinated Chuck Flap Tail and Top-grade Chuck Flap Tail. The weight on the menu is boneless weight, so it is the meat you actually eat. The rib is closely scored so the marinade penetrates evenly and the meat cooks evenly over charcoal, and each cut's thickness and angle are set by grain direction, texture and cooking speed.

The beef goes through three stages of aging that gently tenderize the grain, bringing out its natural flavour and rich, savoury notes. The marinated galbi then gets the house marinade, kept deliberately light on sugar so it does not mask the beef; the fresh galbi is precisely aged and scored and served with no marinade at all — the same rib becomes two different dishes.

How it is grilled — you do not cook

A dedicated server grills everything over the charcoal brazier at your table. Marinated galbi burns easily because of the sugar, so heat control makes the dish; fresh galbi needs a fast sear to hold its juices. If you order both, the usual order is fresh first, marinated second — once marinade hits the grill it masks the cleaner taste of the unmarinated rib.

Prices and how to order

Beef is ordered by the cut, and galbi is priced per 100g of boneless weight, so a table can order only marinated or only fresh galbi. For dinner, ₩90,000–150,000 per person including food and drinks is a comfortable budget.
